A few months ago, my boyfriend's mom invited us to go to a fish taco restaurant, and it was amazing. Since then, I have been making them at home and they are becoming one of my favorite dinners.

I start by making a small salad to top the tacos (green leaf lettuce, red cabbage, onion, tomato, cilantro):

I like the tacos on small flour tortillas with sour cream, the salad toppings, and shredded cheese. Tonight I used frozen, breaded fish that I just baked off in the oven and cut into small pieces. Other times I have used fresh tilapia and shrimp.

I have so many veggies you can't even see the fish! Very colorful and tasty.
