Veggie Pizza

After searching recipes and finally coming up with an idea for the party that was both quick and used veggies, I went to the bunco party to find that two other people brought the same thing! Each recipe was slightly different, though, from the ingredients for the base to the combination of veggies. This is my creation:





Veggie Pizza

1 can crescent roll dough
1 8 oz. package cream cheese
1/2 c. mayonnaise
1/2 packet Hidden Valley Ranch mix
approx. 3/4 c. each (finely chopped):
broccoli
yellow bell pepper
tomato
green onions
1/2 c. shredded cheese

Preheat oven to 375. Roll out crescent dough onto cookie sheet and press the seams together to seal. Bake for 12 minutes, then cool.

Mix together cream cheese, mayonnaise, and ranch mix. Spread evenly over cooled crust.

Scatter veggies evenly over crust and press lightly into cream cheese mixture.

Sprinkle cheese on top.

Refrigerate until ready to eat.

I cut this into 24 pieces. Next time I will use 1/2 of the cream cheese mixture because I wanted more of the crescent flavor. I think this combination of veggies was perfect, though, and will keep it the same for next time.

There was quite a variety of food at the party, but I forgot to take a picture of the spread! Some of the other items included the following:

chips and salsa
chili dip
tomato, mozzarella, and basil salad with peppercorn crackers
shrimp cocktail
veggies and dip
chocolate peanut clusters
chocolate chip cookies
brownie trifle

and...

the best cheese wafers I have ever had. I asked for the recipe, so I'll probably make them next time I go to an appetizer party. They had sharp cheddar cheese and cayenne pepper, two of my favorite things! As one other person at the party stated, "These cheese things will change your life. Seriously, eat one."
